The silly-season of exams, holidays, end-of term sorting out, seeing friends, has slowed down enough for me to decide that it has been too long since I donned my oven-gloves and pulled the flour out of the cupboard… so today I decided to get baking! I had a flick through my biscuit ‘Bible’ after a long walk with my family during which I realised foraging season is upon us! We found some apples and wild raspberries, one of my favourite fruits!

So although this is more of an autumn idea, I couldn’t resist making something with Bramley apples which I love, and these Apple Crumble Bars were my dad’s request!
But to make them just that bit better (since the ones in the book were rather beige beige and more beige-layered, so not much fun to share on my blog!) – I decorated them with white chocolate and miniature icing Bramleys apples! And don’t they look great?
The layers are pastry, stewed apples mixed with custard and then a crumble mixture with cinnamon and nutmeg. But you’ll find out more about this soon, since I have something very exciting to share with you… That’s right, it’s summer again, which means fun crazy projects! So I may just have a little special Henry & Co. and Forages & Finds video collaboration (which is why I haven’t posted this until late!) to share. Coming soon. 🙂
