Salted Caramel Cupcake

What a wonderful week at home I’m having at the moment. It has been raining of course, for weeks on end in fact, and after a sunny stay almost every day in La Rochelle it’s surprising how much I haven’t minded. I’m an odd creature that loves the rain. I’ve had an excuse to stay in and get on with doing up a little wall-cabinet I found in an antiques store, listening to Radio 4 all day for days on end, drinking obscene quantities of tea… basically, I’ve been in heaven.

What with all this hard work painting & listening to debates, many tea-breaks are in order. So this week, my cake of choice was Salted Caramel Cupcakes from this amazing baking blog. For the first time, my butter icing was actually a little more solid than usual! It has a dollop of salted caramel in the centre, and delicious caramel icing. A bit of flake chocolate & more caramel drizzled on top just finished it off. So about as unhealthy as you could get really. Unless you deep fried it I suppose, but that’s not the type of blog this is πŸ˜‰

I’ve been totally on an ideas high since I started my projects at home. It feels good to have caught up with so many friends, been on lots of walks, seen a little English sunshine today, and to be back in the beautiful Cotswolds. I have some big ideas for this blog, so although it has been a little quiet of late, it’s because I’m cooking up ideas at home. Of course, it will always be full of art & cooking, but I think it’s time that we had a little revamping around here. Thanks for reading!
