These little cakes didn’t quite make the cut for my International Women’s Week magazine contribution! No particular reason, I just had lots of ideas to choose from, but they did turn out rather well for a first ever try at marbled cake!
They were made with the ‘Financier’ moulds I got for Christmas (with the Cannele mould and book), but I couldn’t technically class them as financier cakes as instead of using the (4-egg yolk!) more fiddly French recipe I just decided to go with standard fairy cake recipe, baked into tea-accompaniment bite-sized shapes!
The recipe is nothing particularly special, just use a basic fairy-cake recipe (I actually divided mine by half to make a tiny quantity!) and add a spoon of cocoa powder to one half and some orange flavouring and colouring to the other half. Spoon a teaspoon of each colour into each mould, and swirl just slightly together with a cocktail stick. Voila!
