I got a little distracted from my evening plans, which had been to do nothing but relax. In order to relax completely, you need a treat… and after a hot cycle back up into the Cotswold hills after work, I decided firmly that I would settle for nothing other than chocolate mousse – my favourite after-dinner treat when I lived in France. The problem was, our little local shop didn’t have any. I thought every shop had cheap little packs of chocolate mousses – but apparently not. In a moment of wild inspiration, I took some double cream home with me, raided the egg-box & cooking chocolate (which I had successfully hidden from Dom this time – win!) and sploshed in some gin which Dom’s friend Matt had brought over from his new, tiny North-Walian distillery. The result – some seriously adult chocolate mousses. With a glass of gin alongside, obviously. Thanks Matt!

Make sure you look up the North Star Distillery if you’re near Conwy – “Fine spirits inspired, foraged and hand-crafted in rural North Wales.” We can’t wait for the whisky!
