Puffin Cake!

I haven’t had the opportunity to make a crazy cake for a while! I hope you like the cake I made for Seb to celebrate the end of his degree – I’ll admit, it’s quite random! I just brought together two things that I know he likes… Puffins… and maths… what could be a better cake combination. Oh, and chocolate.

And forest fruits in fact, although that’s more because I love fruit with cake & chocolate. So as you may have guessed this is a Black Forest Gateau. A fantastic cake for several reasons… firstly, it only consists of three ingredients – cocoa powder, eggs, and sugar. So as long as you can separate eggs you can probably make it! Consequently, it has no flour, which makes it really light and spongy – and good for gluten-free folk.

Ok, technically it requires fruit & cream too… but they don’t count as ingredients, they’re… um… decorations. And in fact, my cake also has a ganache under the white icing, mainly because I had some left over! It made it absolutely delicious too.

Tomorrow Seb & me are hopefully making macarons… I want to make the blueberry & white chocolate ones!! (Due to my aforementioned chocolate and fruit addiction!). Seb is truly becoming a master of macaron-making. And I’m getting a little jealous of him finishing his degree in fact, what with the fact I’m going crazy over my dissertation right now. Hopefully, once my next meeting is over, I’ll be back in the kitchen!!
