The recipe for a delicious meal… pretty simple to do, and this one cost about £1 per serving… I know – crazy! Which just goes to show, it’s worth keeping your eye on the reduced section of your local supermarket, especially on a Saturday night…

A whole side of salmon, originally £20 (then half price to £10), for £1.50! Probably my best reduced-section find ever. I froze 2/3 of it in portions, and with the rest made dinner…

First grate a couple of slices of bread into crumbs (or place in your mini-chopper!) and chop up a few spring onions & a chilli…

Get your boyfriend (or do it yourself) to cover the salmon with your favourite marinating ingredients – we go for olive oil, soy sauce & lime juice…

Then cover the salmon with your breadcrumb mix, patting it on firmly! Bake in a moderately hot oven until the salmon is no longer transparent but opaque all the way through (this will depend on the thickness of your portions)

To accompany… I remembered my dad’s old “armadillo potatoes” idea that he used to make for us when we were children! Slice potatoes not all the way through, drizzle with oil and stuff with pieces of garlic & herbs. Bake these for about 40 minutes in a moderate oven.

We also had asparagus from the discount greengrocer around the corner, which cost £1 for a really good bunch! A meal fit for a king… 😀
