Summer is here to stay it seems! So mid-week meals is going to be a bit more summery this month… since it’s time for salads, picnics and dinners in the garden…
Foraged-inspired classic…

Caramel shortbread is not technically that summery to be honest… mine is made from thick shortbread, with a thin layer of Bon Maman caramel and some dark chocolate. Eaten in the sunny garden with tea however, who could resist at any time of year? And ‘forage-inspired’ – well – it was made in a very cute thistle-shaped shortbread mold, which you may just about be able to make out.

Picnic Pasties

Instead of soggy sandy sandwiches, for our family beach day we took some little bite-sized home-made pasties! (I do like hyphenated phrases don’t I?). These top ones are you can see started as circles of ready-to-roll pastry, and filled with falafel mix and halloumi cheese…

And these were similarly made with circles of pastry, placed in cupcake tins and filled with spring onions, and a mix of yogurt & beaten egg (plus seasoning) to make mini quiche style pies!

Truffle certainly enjoyed all of the above, and wants to live at the beach now. I have to say, nothing beats a sunny day at the beach with a picnic and a good book. I hope everyone’s enjoying the sun too!
