I have eaten most of my home-made freezer meals, and with one week in this house to go, it is time to tackle the dried foods in the cupboards rather than buy any more food! I seem to have tonnes of cous-cous, and here is my idea for a ten-minute midweek storecupboard meal!

Cous-cous Stuffed Vine Tomatoes
I had a few nice big vine tomatoes in the fridge, and in addition I chopped up half a red onion & grated some cheese. I mixed this with a couple of handfuls of cooked couscous (it takes about 3 mins in hot water to cook) and the chopped up innards of the tomatoes. Then I put it all back into the tomato halves and baked them in a hot oven for 10 mins or so. You could add breadcrumbs, cheese & parsley to the top if you had these ingredients, or add anything you like to the filling really! Just raid your fridge.
