I have been really determined to make something sweet recently, so I looked up ways to make cookies in the microwave! This wasn’t entirely what I imagined, but they turned out quite well – they remind me of Rice Krispy Cakes but with oats and peanut butter! However, being my tired, clumsy, awaiting-Christmas self I had a few problems with this recipe, simple as it is!
Perhaps it’s just a cultural thing, but Cup measurements tend to annoy me! I brought some scales here, but I don’t have any measuring cups, for one thing. Secondly, it just seems way less accurate to me than being able to measure something to the gram! Finally, it’s just not a good idea to try and convert a recipe from cups to grams, while halving it at the same time. Something will go wrong! So, while looking up all the equivalents for oats, chocolate, peanut butter etc. on the internet I sort of forgot to half the milk quantity. In fact, not only that, but I forgot to even read the measurement and put a whole cup in. So ended up with four-times too much milk. OOPS! Never mind, drained some of the mixture away (kept in the fridge just in case!) added lots more oats and hoped for the best!
They turned out quite well considering, with my little marzipan hearts on – since marzipan comes in different colours here! This is the recipe if you want to make them – a novel little idea! I used the microwave to melt the ingredients, then you stir it all together and leave to set in the fridge. Just watch how much milk you put in. 😉
